Football and Panini's

I love football and I love to cook. I didn't want to eat buffalo wings, nachos, burgers or anything like that during the game today but I wanted something different and that tastes great. Instead of looking up recipes, I decided to come up with something that was quick, simple and what I had in my home: Chicken Caprese Panini's.

Here is what you will need:

Sliced Whole Mozzarella & Tomatoes *I only had cherry tomatoes*
                
Olive Oil & Basil Pesto

               
Sliced Sourdough Bread


                
Rotisserie Chicken (1 breast, torn into pieces)






Preheat your panini maker while you are making the sandwiches.

First, spread basil pesto onto one slice of bread.





Next, add the chicken on top of the pesto.




Then, add the tomatoes on top of the chicken.




Then add the sliced mozzarella on top of the tomatoes






Spread basil pesto on the other slice of bread








Drizzle olive oil and spread on the top & bottom of the sliced bread

























Sit the sandwich on the panini maker & close the lid























Gently press down on the handle to make the sandwich smash together to get an evenly cooked sandwich and this allows heat to get inside the sandwich to warm up the mozzarella. Then let it cook for about 5-8 minutes

Then voila! The sandwich is done! Cut in half & enjoy!

New Beginnings for 2013

There are so many things that I want to do for 2013.  Instead of making resolutions, I'd rather make them goals (which is probably the same thing). The thing I want to do mostly is blog more.  I am so over the Facebook era and I haven't posted anything on Facebook lately because I'm so over it for numerous reasons.  I do however love Instagram.  I would like to expand my blog life more by meeting new people through their blogs but....I barely know how to do the fancy stuff on blogs.  I pretty much know how to make new posts and change the layout and that's it.  It can be so intimidating at times looking at other people's blogs and I am just amazed at how it looks and then I look at mine like....dang, it's whack! LOL!
Since I am going to school right now for my Bachelor's degree in Business management/HR management, that takes time away from me for blogging and doing other productive stuff.  24 hours isn't enough hours in a day to do everything that I want to do. The best part about school is that I'll be done in May/early June and then I can really use my spare time on blogging.  Even though I am a newbie, please feel free to help me along the way to make my blogs better for your entertainment.

Memorial Day Weekend

I had a wonderful weekend with my family for the holidays.  As I get older and more wiser, I realize that family is important to have in your life. Friends come and go but family will ALWAYS be there. The moment when my husband and I got married, I've never felt more complete when I gave myself to him. It was great being able to be around family this holiday and to talk about our destination wedding in Miami Beach, FL that happened on May 5th. Once I get our wedding photos, I will post some pictures. Until then, here are some pictures from the Memorial Day weekend.
